Made only from the milk of purebred ewes, this creamy cheese is a softer, milder version of its aged cousin, full of sweet grassy notes and perfect for any late summer fruit dessert. Podda Classico, made by Ferruccio Podda since 1952, is an aged Sardinian sheep and cow’s milk cheese. Its flavor is a bit deeper and sharper than the Pecorino, and it goes beautifully with your favorite Italian red wine—perfect as we head into cooler evenings. Lasly, Crucolo, a 100% cow’s milk cheese from the Trentino-Alto Adige region, tastes as beautiful as it looks. Mild yet complex, its rich, buttery flavor and surprisingly tangy finish lends itself well to fresh berries, early autumn apples, or crumbled even atop grilled pizza.
