Aged Sardinian sheep and cow's milk cheese is sharply flavored. Made by Ferruccio Podda, cheesemaker since 1952, this particular cheese is aged for six to 10 months, and may be described as a “classico misto stagionato,” consisting of mixed sheep and cow's milks. The flavor is rich and deep, and goes beautifully with robust red wines. Podda may also be grated for sauces and over pasta. A perishable product, Podda Classico may require 2nd day shipping, depending on distance.
