Croxetti are coin-shaped disks of pasta stamped with symbols – such as a sheaf of wheat or coat of arms. The pasta from Liguria were created when Genovese nobility wanted to imprint even pasta. Sometimes also called corzetti, this pasta is perfect with pestos, with vegetable sauces such as Croxetti with Cauliflower, and with a Pork Ragu.
