Dense and delicious, Saba is a unique fruit condiment made of the concentrated must of Lambrusco grapes. These are simmered in copper kettles over an open flame for 30 hours before aging in wooden barrels. Saba, a pure, sweet and velvety syrup with subtle overtones of spices, grapes and figs, can flavor savory and sweet dishes. It can sweeten desserts instead of sugar, such as cheesecake, fruit salad, tiramisu, panna cotta, or ice cream. It’s also good in marinades or to season meat. Added to sparkling water or Prosecco, Saba makes a refreshing aperitif.
