Unfiltered, herbaceous olive oil from Partanna, Sicily,  this is produced by the Asaro Brothers Company. Like all of our oils, this one is a first cold-pressed, extra virgin olive oil, and is also an early harvest oil from single-olive varietal (Nocellara del Belice). When the tins are first opened, the unfiltered oil is cloudy with a green hue, herbaceous aroma and distinctive flavor. As the oil ages, it will mellow slightly and become clearer as the sediment drops to the bottom of the tin. The colorful packaging protects the oil from sunlight, keeping it fresh longer.
